This variety was originally introduced into California as a cultivar from Spain sometime in 1874. The variety is known for its large size and its use as a "table olive". It's one of the four major cultivars in California and accounts for 27.1% of the bearing acreage in the State. In the early 1980's growers began the first organized extensive pressing of this variety in the "Fall" and in the early 1990's they began the first pressing of this variety in the "Winter". The variety's oil flavor dramatically changes as it matures and becomes ripe taking on an intense aroma reminiscent of flowers with a complementing wonderful floral flavor. Ideal for use in those special salads or as a compliment for flavoring. A small amount goes a long way.
